They are a little pricey, but those of us who know paella know that Bomba Rice is the grain to insist on. It swells (with flavorful stock) without bursting, rendering the texture to a skillfully built paella that gives it that depth of appeal. No, please don't overload your paella with too many items; and DON'T look to Mexican sopa seca as your comparison.
