Quickly builds up after a wash. You need to quickly dry the product. The heat distribution is pretty bad. When making paella I had to use two burners to in order to get the edges as well as turn it constantly. Very uneven distrubution when trying to cook on a normal fire stovetop.

I gave this a neutral rating because it's up to the buyer to understand the nature of carbon steel and cast iron. Carbon steel pans like this can only be used for serving Paella immediately after cooking otherwise they are going to rust. You can't store left over portions int it etc because carbon steelcast iron does not tolerate liquids or moist ingredients(any patina you might think you have will boil off). This pan is fine if you are prepared to wash, dry and spray with oil after EVERY use. I you are like me who would like to save leftovers in the paella pan itself or wait until the next day to clean then you should invest in a stainless steel pan instead. BTW: Polished steel is a completely meaningless term when it comes to weather it will rust or not. Look for carbon steel(will rust..less expensive) or stainless steel(wont rust...more expensive)

this is a high quality paella pan that should provide many years of life. remember to always wipe it down with oil right after it's been cleaned.

I ordered this pan before and loved it. Then I ordered the same item again to send to my sister. I ordered new but was later sent a message that it was used but inspected and packaged as a new one would be. Wrong! It was so dirty it smelled like a dirty unwashed pan. It was rusty with burn marks all over the bottom.
