Coconut macaroons

Whip up a batch of these irresistibly chewy and golden Coconut Macaroons for a treat that’s as easy to make as it is delicious. Made with Gourmanity condensed coconut milk and sweetened shredded coconut, these macaroons are bursting with tropical flavor.

The addition of fluffy egg whites gives them a light, airy texture that perfectly balances their rich sweetness. Whether for a special occasion or a quick homemade dessert, these macaroons are sure to delight.

Ingredients

  • 2 ½ cups sweetened shredded coconut
  • 2/3 cup Gourmanity condensed coconut milk
  • 1 tsp vanilla extract
  • 2 large egg whites
  • ¼ tsp salt
  • 1 cup dark or semi-sweet chocolate chips (for base and drizzle)

Instructions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix 2 ½ cups of shredded coconut, 2/3 cup of Gourmanity condensed coconut milk, and 1 tsp of vanilla extract.
  3. In a separate bowl, beat 2 egg whites with ¼ tsp of salt until stiff peaks form, then gently fold into the coconut mixture.
  4. Drop small mounds of the coconut mixture onto the baking sheet, spacing them evenly. Bake for 20-25 minutes or until the macaroons are golden brown.
  5. While the macaroons cool, melt ¾ cup of the chocolate chips in the microwave or using a double boiler until smooth.
  6. Dip the bottom of each cooled macaroon into the melted chocolate and place them back on the parchment paper to set.
  7. Melt the remaining ¼ cup of chocolate chips and drizzle over the tops of the macaroons using a spoon or piping bag.
  8. Let the chocolate set completely before serving.
