Tropical Summer Delight Cake

This Fruity Pineapple Cake is a delightful celebration of summer flavors, featuring a soft, fluffy cake topped with sweet, marinated fruit and light whipped cream. Infused with the tropical sweetness of Gourmanity pineapple syrup, the cake is moist and perfectly balanced.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup Gourmanity pineapple syrup
  • 1 tsp vanilla extract

Fruit Topping:

  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh peaches, sliced
  • 2 tbsp Gourmanity pineapple syrup

Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the milk, Gourmanity pineapple syrup, and vanilla.
  5. Gradually stir in the dry ingredients until just combined. Avoid overmixing.
  6. Pour the batter into the prepared cake pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely on a wire rack.
  7. While the cake is cooling, mix the sliced strawberries, blueberries, and peaches with 2 tablespoons of Gourmanity pineapple syrup.
  8. Let the fruit sit and soak in the flavors.
  9. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  10. Once the cake is cooled, spread a layer of whipped cream on top.
  11. Arrange the marinated fruit evenly over the whipped cream.
