Homemade glucose syrup caramels

Homemade caramels are a delightful treat, and this recipe makes them wonderfully soft and creamy with the help of Gourmanity glucose syrup. This key ingredient ensures the perfect smooth texture, while the rich buttery flavor makes each bite irresistible.

Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 1 cup Gourmanity glucose syrup
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Line a square baking pan (8x8 inches) with parchment paper, leaving an overhang on the sides for easy removal. Grease the parchment paper with butter or cooking spray.
  2. In a heavy-bottomed saucepan, melt the butter over medium heat.
  3. Add granulated sugar, glucose syrup, and sweetened condensed milk. Stir continuously until the sugar dissolves.
  4. Attach a candy thermometer to the side of the saucepan. Bring the mixture to a boil, stirring constantly.
  5. Continue cooking until the temperature reaches 240°F (soft ball stage). This may take around 10-15 minutes.
  6. Remove the saucepan from heat and stir in the vanilla extract and salt.
  7. Mix well to combine.
  8. Carefully pour the hot caramel mixture into the prepared pan. Allow it to cool at room temperature for a few hours.
  9. Once the caramel has cooled and set, use the parchment paper overhangs to lift it out of the pan. Place it on a cutting board and cut into individual caramel squares using a sharp knife.
  10. Wrap individual caramels in wax paper or parchment paper for storage. If you're not wrapping them, store the caramels in an airtight container, separating layers with parchment paper.
