Roast Beef with Dried Bell Peppers and Herb Crust

Ingredients

Instructions

  1. Preheat your oven to around 375°F to 425°F.
  2. In a small bowl, mix the chopped dried bell peppers, minced garlic, rosemary, thyme, salt, and black pepper.
  3. Pat the beef roast dry with paper towels and then rub it all over with the Dijon mustard. The mustard will act as a binder for the herb crust.
  4. Next, coat the entire surface of the roast with the dried bell pepper and herb mixture, pressing gently to adhere the seasonings to the meat.
  5. Heat the olive oil in an oven-safe skillet or roasting pan over medium-high heat. Once hot, sear the roast on all sides until nicely browned. This step helps to lock in the flavors and create a delicious crust.
